Pink easter cupcakes...

Happy Easter to everyone out there...

Today I'm off to a family visit, but I couldn't appear there without bringing any sweets along, so I've decided to bake some cupcakes...

First, you have to mix all ingredients and pour them in to a 12 hole cupcake tray:

90g butter
1 teaspoon coco nut rasper
110g caster sugar
2 eggs
150g flour
1 teaspoon baking powder
2 table spoons milk

Then you can put it in a pre-heated 180° C oven for about 20 minutes.


After baking, the cupcakes have to cool down a little , but in the meanwhile you can prepare the icing:



150g icing sugar
2 to 3 table spoons water
food coloring
(coco nut flakes for decoration)

For the icing mix the three ingredients given above with a fork and the you can apply it on the top of the cupcakes and cover the cupcake evenly with a knife. As long as the icing is wet you can sprinkle some coco nut flakes over it.






















After the icing dries, you can cut a little, about 1cm deep, hole in the cupcake and remove the plug. There you can drip some strawberry marmelade in it and cover it with some whipped cream. For finalizing plug the cupcake plug in again...




So, enjoy baking...
